We are humbled , it has always been an absolute delight to serve you!

Karlton's food, for me, is the epitome of the concept of ‘ugly delicious’; not that it’s even ugly to begin with. This man works a grill like no-one I’ve ever met. His steak is still one of the best I’ve ever eaten, hands down, and this includes my travels, which is saying something, considering that this is India we’re talking about, while rating beef highly.

However, this post isn’t about any of that. It’s about my journey, dining with Karlton. I first turned up on his doorstep in 2008, and there’s never been a question of looking back since. Every meal I’ve had there has been incredible, from the first one I had – when the roof was thatched, with rice lights that spelt the name of the establishment, ‘Horizon Grill’ for décor – to my most recent, when he gave up with a restaurant name (since everyone just said that they were going to Karlton’s anyway) and decided to re-christen it ‘Karlton’s Horizon Grill’.

This pie sums up for me, everything that Karlton stands for. Generosity in serving size, flavour because of his need to be larger than life, and a welcome simplicity that sings varied notes of homeliness. I remember (well over a decade ago) getting done with gigs around closing time, a few kilometres away from him, calling him on the phone and dialing in an order for one of these. He would NEVER say no, even though he would make them from scratch and it would take him nearly an hour to get it done. It was never intentional, but after some gigs, I just felt the need for emotional warmth that his food provided.

I ate this a couple of weeks ago, after a gap of over a year, and everything I’ve described above came rushing back to me. That is the kind of joy and emotion that only good food can bring, and dedicated chefs who can make said food; chefs like Karlton.
