Our chicken is coated in a batter we make completely in-house using a blend of different flours and roughly 14 ingredients to create that deep, dark crust weโ€™re known for. Crisp, rich and full of flavour.

Our brine, well that's a whole other story!

Finished in our own Nashville hot oil blend with house-made pickles and our Louisiana remoulade

Brisket. Itโ€™s been with us from day one.

Itโ€™s changed over the years โ€” through practice, time, and learning.

We spent time working with Ali Clem, owner of La Barbecue in Austin, Texas ( Michelin-star barbecue, might we add ) at Big Grill Festival in Dublin last year. It pushed us to rethink things, moving from low and slow to a hot and fast approach on our briskets that, for us, produces the best brisket weโ€™ve ever put out.

What hasnโ€™t changed is where it starts.

Angusโ€“Hereford cross, raised in the southeast of Ireland. Grass-fed, properly reared โ€” Irish beef.

We source it through McConnell's Butchers โ€” our butcher, Shane McConnell, the maestro of meat.
Heโ€™s been with us since the beginning, selecting briskets exactly how we need them.


Salt. Black pepper. Thatโ€™s it.
Smoked over oak from Goodwood Fuel.
