Behind every Pig’s Lane cocktail is a process of experimentation, precision and storytelling.

For our Legend of Muckross Abbey, blackberries are gently warmed at a carefully controlled temperature to draw out vibrant fruit flavour while preserving their natural freshness and acidity. Our wild sloe bitters are crafted using ultrasonic soundwave extraction, allowing us to rapidly capture layers of flavour, colour and aroma from berries, spices and botanicals.

Every ingredient, temperature and extraction time is considered. It’s a balance of modern technique and creative curiosity, designed to express the wild landscape that inspires the drink while delivering depth, clarity and consistency in every glass.

Together, these techniques form the foundation of this drink that
reflects the thought and craftsmanship behind Pig’s Lane cocktails.

As we step into the summer months here at Pig’s Lane, we're excited to kick off our Legends & Libations ‘Samhradh Series’ with local storyteller Ray O’Sullivan.

On exclusive dates, during June, July and August, Pig’s Lane's hidden Whiskey Parlour will come alive with ancient stories and local lore as one of Ireland’s leading seanchaithe, guides guests through an unforgettable evening.

Hear stories of restless spirits, otherworldly encounters, and the powerful figures said to roam Killarney’s mist-covered lakes and ancient woodlands. From the enigmatic Arthur Edward Guinness to the spectral Chieftain O’Donoghue, the memories of this storied landscape linger just beneath the surface.

The evening promises a fully immersive experience, featuring three of Pig’s Lane’s signature cocktails.

Part of our underground charm is the quirky wall hangings that are placed in our main bar and whiskey parlour walls.

From Irish railway signs, old railway maps of Headford train station, old classic film advertisements and whiskey memorabilia, there’s a real sense of nostalgia throughout, with plenty of pieces to spark curiosity and conversation…

As far as Thursdays go, last night won’t be topped💚

The Dead Rabbit cailíní Monica and Brittany brought the New York and Texas energy alongside our crew behind the bar.

From TDR Irish Coffees and cocktails, to Homebound and The Black Shtuff, the drinks were flowing all night. A big thanks to Don Julio Tequila, Roe and Co Whiskey and all at Diageo & World Class Ireland for their support.

Nights like these are what Pig’s Lane is all about and we loved every minute.
