We sat down with Head Chef Colm Bushell to talk about the meaning behind Dillisk on the Docks, our restaurant. “I think Galway has a very strong community," he added, "and I think that’s reflected through our relationships with our suppliers and the team we have here in Dillisk as well.”
Colm has been working in the restaurant industry since he graduated from ATU, and the career has given him opportunities to travel around the world.
Ultimately, he returned to Galway to be back with his family and in a place with ideal access to fresh, locally sourced ingredients.
