Another brilliant evening on the trail last night at JT Pim’s with the team from 🥃

The standout for us? The incredibly interesting 13 Year Old Peat Cask Finish — smoky, layered and full of character. The Bourbon & Oloroso finish was absolutely yum too, rich with sweetness and spice in all the right places.

And getting to sample the new make spirit at a punchy 62% was a real treat — always fascinating to get a glimpse of what’s to come from a distillery with so much potential.

We’re also hoping to see their Single Grain make an appearance on our tour very soon 👀

It’s Whiskey Wednesday so that means getting into the back of the whiskey press and digging out bottles I have forgotten all about. Look at this for a treat, double distilled Irish single malt from the foothills of Errigal mountain, Co. Donegal. This was one of my favourite distillery tours of last year, if you are interested in visiting get in touch as we are offer amazing ways to get there ie flying to the Northwest and landing on one of the most scenic runways in the world!

When people ask how I got into whiskey I say, this guy. It’s my dad’s birthday today and in honour of him I share this little piece if wisdom imparted to me by him. Picture the scene, I bring him a new bottle of whiskey, talk about he distillery, the barrels, the notes and aromas, his reply … shut up and drink it 😂🥃👴🏼. As we were representing the best of Dublin experiences we choose 3 whiskeys (, and ) with ties to the city, who exemplify great grain, malt and pot still.
