Earlier this week, a lady from California sat down at our table. She took one bite of this linguine con le alici and her face lit up. When she finished the plate, she told me, “It makes me so happy. Back home, chefs are afraid to use anchovies. But this… this is so perfectly crafted. And trust me, I’ve been to a lot of great restaurants...”

Unlike the well known carbonara or ragù, anchovy pasta isn’t for everyone, and that’s exactly why we think it’s underrated.

Anchovies have been a staple in Italian coastal cuisine for centuries, humble, preserved, packed with umami, and full of heart. Along the Amalfi Coast and in Sicily, fishermen would toss these salty little treasures into pasta with just garlic, olive oil, and chili. Simple. Honest. Soulful.

Here, we keep it true to its roots-just anchovies and Italian butter, slowly melted down into a rich, velvety sauce that clings to every strand of linguine, add toasted pistachios for crunch and depth.

It’s the kind of dish that tastes like sunshine, sea breeze, and the quiet confidence of something time-tested.

Perfect pair with a glass of crisp white wine and a long, lazy weekend lunch. 🍽️ 🍷
