The Southern Belle cocktail, is a refined and refreshing drink. Its history is intertwined with the rich traditions of the American South. The cocktail’s creation dates back to the mid-20th century, a period marked by the resurgence of classic cocktails and a growing interest in regional American flavours.

Characterised by its use of bourbon, a staple spirit of the South, the Southern Belle often includes creme de peche or fresh peach puree, paying homage to Georgia, the “Peach State.” This combination of ingredients captures the essence of Southern charm.

The cocktail gained popularity in the 1950s and 1960s, particularly in social gatherings and garden parties, where it was appreciated for its light and fruity profile.

I’m Allergic is the next signature cocktail on our menu which falls into the sour category. I’m Allergic contains Maharani Gin from Rebel City Distillery, (a very unique gin that we love here at Monk), lemongrass, coconut, ginger, lime and Cork Rooftop Farm’s micro coriander.

I’m Allergic is a very light and refreshing cocktail with a bold flavour profile taking inspiration from asian cuisine, perfect for the hot summer days.

If the idea of coriander in a cocktail makes you feel pure allergic, this cocktail will certainly cure you!

The history of the South Side Cocktail traces back to the Prohibition era. The origins of this cocktail are subject to some speculation however it is believed to have been created in the 1920s at the Southside Sportsmen’s Club on Long Island. Another popular story links it to Chicago’s South Side, where it was favoured by gangsters, possibly due to its refreshing taste that masked the harshness of bootleg alcohol.

Its vibrant, minty and fresh flavour has ensured its lasting popularity making it a staple in bars around the world.

Our cocktail menu revolves around the idea of old vs new in order to show how cocktails have developed throughout history.

From this concept we have meticulously curated our classics & signature cocktail list, showcasing the best of each cocktail category.

Our non alcoholic cocktails hold a place close to our hearts. We have decided to collaborate with a different organisation each menu and give back to those who do amazing work in our local community.

A huge thanks to all the suppliers for the amazing ingredients that have helped us create this menu!

We relaunched Monk on the 18th of April 2024. We have come along way in the few months since starting this project and we couldn’t be happier with the outcome.

We want to give a huge thanks to .brand for the amazing work they have put into reconstructing the space and the brand. This wouldn’t have been possible without everyone who has helped along the way.

We're delighted to announce that our Brewery Tours & Tastings are back in action from July 1st!
The tours will run 7 days a week at 1pm, spaces will be limited to accommodate social distancing so booking is advised!
