This dish is inspired by our recent visitors from Georgia, featuring beets of many colours in Tkemali sauce, which we're serving with Corleggy goat's cheese, rocket and mint.

Tkemali is the famous plum sauce thet features on every menu in Georgia, made from a variety of different plums, which are harvested young to add a pungent tartness to their dishes.

Tkemali is a bit like Georgian ketchup, often served alongside grilled or fried meats and vegetables. No table is complete without it and most families make their own.

Thanks Ana of Poliphonia for sharing your beetroot recipe with us ❤️

Chocolate & W**e - A Tasting and Masterclass

Thursday 3rd Sept 6.30pm with Orinoco Chocolate (Arizona)

In conjunction with The Chocolate Shop, we’re delighted to host Jessica Elis and Christian Tyler of Orinoco Chocolate Company, a bean-to-bar premium chocolate producer, who will be visiting Ireland in September for a talk and tasting of their delicious chocolate, and we’ve decided it would be fun to find w**es to match.

Based in Prescott, Arizona, Orinoco specialises in making bean-to-bar chocolate ethically sourcing high quality cacao directly from small farmers and cacao suppliers, primarily in Venezuela, but also from other small growers around the globe. They have developed strong friendships with the farmers they work with.

The Orinoco River has historically served as the only means of communication and transportation of goods for the indigenous inhabitants of the Venezuelan interior, connecting Venezuela with South America. Today, the vast Orinoco connects Venezuela with the world, as some of the cacao they source is transported via canoe. All of the Venezuelan cacao they use is grown in or around the Orinoco River Basin.

We would have liked to include this event as part of Cork on a Fork, but the timing of the visit and a busy events’ schedule means it will take place on September 3rd - but I’m sure this will come as welcome news to anyone looking for something fun to do as we approach the quieter season!

Join us upstairs in L'Atitude for a fun evening tasting chocolate and w**e! 🍫🍷

Tickets €35.

Spaces limited. Booking essential Email [email protected] to book.

SUPRA - A Georgian Feast in St Peter’s - Thurs 13 Aug  - Cork on a Fork
Fans of Georgian w**e, cuisine and culture for a long time, we are delighted to finally have the opportunity to welcome a team of Georgian chefs and w**emakers from Poliphonia Restaurant Tbilisi and Pheasant’s Tears W**ery to Cork, to create a special ‘Cork’ Supra.
Supra means “tablecloth” and is used to describe how shared dishes accumulate over the course of the meal to cover the table. Georgians, like the Irish, are incredible hosts, and even better storytellers - the Supra is their hospitality ritual that binds food, w**e and storytelling into a single shared experience. Dishes, w**e and toasts are shared over the course of the meal, resulting in a truly convivial experience.
Georgian cuisine has been shaped by its location at the crossroads of Europe and Asia: Persian spices, Ottoman techniques and ancient Caucasian traditions all leave their imprint. Famous for its use of walnuts, fresh herbs, ferments and filled breads, we are excited to marry Georgian recipes with Cork’s finest seasonal ingredients: over the past months, our kitchen has been working with local producers to gather a larder of local ingredients, which we’ve pickled and fermented in Georgian tradition for the meal. It’s the time of year when there’s a wealth of delicious fresh fruit and vegetables to work with, so this will also be a celebration of Cork’s producers.
Perhaps the most exciting aspect of Georgia is its w**e - widely recognised as the oldest w**e-producing region in the world, with over 8000 vintages, w**e is  fermented and aged in qvevri—large clay vessels buried underground. At a supra, Georgian w**e is not poured casually. It is introduced through toasts and no Supra is complete without a Tamada (toastmaster). We’re thrilled to welcome John Wurdeman of Pheasant’s Tears to guide us through the w**es and lead the toasts. John is an incredibly eloquent speaker who can transport one to Georgia simply through words.
Due to the popularity of this event, it sold out quickly, but the good news is we’ve released some additional tickets for those who’d like to experience the magic of a Supra. See link in bio

Bottles & Bites: Poliphonia Takeover 🇬🇪

We’re delighted to announce that Poliphonia will take over L’Atitude on Wed 12th Aug with a selection of Georgian Bottles & Bites. Our Georgian friends will be in Cork for Cork on a Fork, and while they’re here we are really excited to have them take-over L’Atitude for the night!

Poliphonia restaurant is known to revisit classic Georgian cuisine, using the freshest seasonal ingredients and serving the very best natural Georgian w**es.

Head Chef Ani Shotniashvili and her team run one of Tbilisi’ most famous restaurants, their modern approach to age-old classic Georgian cuisine has won them numerous accolades.

Poliphonia has done similar pop-ups in Spain, Denmark, Japan, Austria and Thailand and we are thrilled they’re coming to Cork.

Georgian cuisine is a rich, flavourful bridge between Europe and Asia. Its location has shaped its table: Persian spices, Ottoman techniques and ancient Caucasian traditions all leave their imprint.

W**e anchors this continuity. Georgia is widely recognised as the oldest w**e-producing region in the world, with archaeological evidence of w**emaking dating back 8,000 years. Traditional Georgian w**e is fermented and aged in qvevri—large clay vessels buried underground, imbuing them with a very unique flavour and texture. We’ll be pouring flights of 4 different w**es to showcase the different styles of Georgian w**e.

Georgian w**e is not poured casually, it is introduced through toasts. We’re thrilled to welcome John Wurdeman of Pheasant’s Tears W**ery to guide us through the w**es and lead the toasts. John is an eloquent speaker who has the ability to transport one to Georgia through words.

The price for the event is €50 (which includes a flight of 4 w**es and accompanying bites).

The event will be divided the event into 2 sittings
1st sitting: 6pm to 8pm
2nd sitting 8pm
We will also be taking walk-ins at the counter - there’s no set time for seats at the bar.

Email [email protected] to book, indicating your preferred time-slot. or if you prefer to keep it loose, you can always chance a seat at the bar

Well, they named a song after the N17, so why not name a w**e after another road? 😁
SP68 gets its name from the strada provinciale that passes close to Arianna Occhipinti's hometown of Vittoria. A road that was historically used to transport w**es to the coast. A small, unremarkable road that, today, has gained icon status thanks to Arianna and her legendary w**es.
SP68 Bianco is a perfect example of Arianna's ability to make amazingly complex w**es with incredible drinkability. W**es that taste 100% of the land that gave birth to them. This white is a blend of Zibibbo and Albanella - deeply aromatic, yet surprisingly light. A little maceration on the skins gives it a hint of tannin. A w**e to sip slowly while you watch the sun go down over the Lee and imagine you've taken a trip on the SP68 to the coast, and are basking in the Sicilian sunshine.

The first tomatoes from Kilbrack Farm are in! It's mind-blowing just how juicy Irish tomatoes can be - but you wouldn't expect anything less from organic veg maestro Paddy Frankel
Served simply is the only way to go, but the addition of pomegranate gives them some extra pep 🍅
