From Shanghai to Uluwatu. 🥃

A few years back, a visit to Union Trading Company showed us just how brilliantly oolong tea pairs with bourbon. We took that inspiration back to White Rabbit and crafted the Uluwatu 560—named as a nod to their original 560 Fuxing Road location where the idea first took root.

We’ve put our own spin on it by swapping the original amaro for Montenegro, adding chocolate and cocoa bitters, and finishing with a touch of saline to round out the edges.
Rich, tannic, and balanced.

Originally from Milan, Italy, Alessandro leads our bar team with a passion for hospitality, creativity, and the craft of cocktails. From the drinks we create to the way we welcome our guests, he plays a big part in shaping the White Rabbit experience every night.

He’s the face behind the bar, the one pushing the team forward, and the person making sure every drink that leaves White Rabbit is exactly as it should be.
