Nouvelle Restaurant presents Jakarta culinary connoisseurs with an exquisite fusion menu, mixing French and Japanese cuisines with a modern touch.
French and Japanese food has so much in common. Both cuisines use fresh raw materials of high quality with unique and artistic appearance. Nouvelle – which means “new” in French – is a restaurant plus an elegant bar and lounge, located on the ground floor of the Equity Tower in the Sudirman Central Business District (SCBD), Jakarta.
“We are very excited to bring the concept of Nouvelle cuisine to Jakarta. Our combination of unique flavors and modern cooking techniques provides guest with a dining experience which will not be forgotten,” says Winston Jusuf, as the Director of Operations at Nouvelle Restaurant.
Visitors of Nouvelle will be spoiled with rotating menu choices such as Escargot Nouvelle and Edamame Bavarois. Both menu options can be found on French menus. However, Nouvelle serves its dishes with a touch of Japanese inspiration. The escargot is glazed with a smoky ham hock dashi nage with the fragrance of yuzu lemon and a hint of toasted pepper and black truffle. The savory Edamame Bavarois is surprisingly light and fresh. It’s topped with house-cured salmon, Japanese ikura caviar, and crunchy hazelnut-sesame crumble. It’s served with a shot glass filled with juiced shiso and mint leaf blended with wakame stock.
The menu at Nouvelle has a strong focus towards seafood. There are many full flavored menu options such as a pan seared sea bass fillet topped with an interesting combination of tapioca pearls cooked with roasted squid consommé and served with crisp sous vide white onion pedals. Nouvelle’s signature creamy risotto is flavored with shiro miso and Parmesan cheese, then topped with a perfectly seared scallop, local yabby, caviar, and white chocolate emulsion.
For those who prefer a bite of red meat, Nouvelle offers an exquisite cut of Fillet Mignon that’s been marinated in porcini, rosemary, and dashi. It’s served with spinach cream rich with mascarpone cheese, bone marrow tempura, shimeji mushrooms, and shoyu beef bordelaise. Another signature dish with powerful flavors is the Duck Aiguillette served with a truffled sweet potato beignet, mirin poached figs, ibérico, hibachi king oyster mushrooms, and burnt orange jus.
To compliment your delicious meal at Nouvelle, diners can choice from a variety of unique desserts. Try the Miso Chocolate Palet layered with crunchy sable, peanut butter, salted caramel, and miso infused chocolate mousse, which is glazed with Valrhona dark chocolate and topped with caramel popcorn. The Mint Crémeux on the menu is equally divine. Mint infused chocolate fudge with whipped crème fraîche, chocolate chip cookie crumble and shiso pearls offers the diner a refreshing flavor that lingers.
All dishes can be enjoyed in a modern atmosphere with a variety of beautiful European elements and Asian ambience. Nouvelle is also equipped with a second floor offering guests a private dining room overlooking the restaurant, and a separate lounge room with sofa and entertainment system.
