Our latest monthly receipt is in, and you all managed to drink a remarkable number of sustainable cocktails, saving 16.5kg of premium local ingredients from going to waste🍸♻️

Last month, you drank your way through our menu and brought these five signatures to the top: Puff Pastry, Gelato, Milk, Stout, and Pineapple Skin. Instead of letting leftover pastry or surplus stout sit around, our team ran them through the lab to build the complex, crisp flavours you keep coming back for.

A crisp, vibrant margarita—built on a foundation of leftover soy sauce 🌶️🍉

Our Soy Sauce signature is a fresh spin on a classic margarita. For every 100 ordered, we head across the street to reclaim 240 grams of soy sauce from , distilling it into a vodka base to pull out its deep, savoury depth without the heavy colour.

By layering that umami foundation with tequila, bright clarified watermelon agave, and fresh lime, we’ve built a perfectly balanced sweet-and-sour cocktail, finished with an electric rim of Sichuan pepper salt.

Our team went up the street to collect rice, then came back and created something unexpected 🍚🍈

Rethinking rice means moving past standard flavours. For every 100 ordered of our Rice signature, we reclaim 3.2kg of leftover grains from our neighbours at .hk, washing them into an Iichiko Shinwa base to extract a dense, luxurious texture.

By balancing that smooth weight with clarified melon, the citrusy heat of distilled Sansho pepper, and Muyu Jasmine Verte, we have shaped a remarkably clean, complex profile that challenges how you view a simple staple.

In just one week, it’ll be time to taste the apples 🍏

Our outside wall just got a fresh new look, and so did our specials menu. To celebrate .hk’s new mural wall, painted by local artist , we’ve teamed up with the fruit-forward team at  for a one-off cocktail collaboration.

Launching on 4 June, we’ve created three distinct, layered drinks for you to try. Each one explores the lifecycle of an apple:

Apple (Day 1): Bright, airy, and crisp with a citrus-like tartness.
Apple (Day 3): Fresh fruit meets deeper, complex aromas.
Apple (Day 5): Rich, sweet, and beautifully caramelised.

From the counters at Hooked to a sparkling, coastal cocktail 🦪🥂

For our Oyster Shell signature, we get the best shucks from our favourite fishmongers. Every 100 drinks we make allows us to reclaim 1.6kg of surplus oyster shells from local fish & chip shop , distilling them into a vodka base to lock in a crisp, ocean-fresh minerality.
It is a beautifully balanced, savoury-sour signature layered with bright Calamansi gin, tropical passionfruit, and finished with a sharp splash of sparkling wine.

The traditional recipe relies entirely on ginger and honey for balance. For Green Apple, we introduce a crisp complexity by infusing reclaimed apple cores from .hk’s cocktails into our cocktail’s whiskey base.

By layering that vibrant fruity character with smoky Ardbeg 10, rich Fino honey, and a delicate touch of Lychee Baijiu, we created an elegant, highly texturised evolution of a favourite.

Sustainability in the bar industry usually means vague promises. We prefer receipts.

These are the top 5 signatures you drank at SOCiO over the past month. Because you chose these drinks, we were able to work with our SoHo neighbours to upcycle nearly 15kg (from our top 5 alone) of premium ingredients that would have otherwise been lost.

Every single glass of Banana Peel, Green Apple, or Puff Pastry served directly drove this collective impact—proving that upcycling works best when we do it together.

When the bar down the street has surplus, we make a signature 🍵

For every 100 serves, we reclaim 420g of white tea leaves from our friends , locking the tea’s delicate, floral notes into a vodka base. Layered with  gin and rhubarb, and finished with a classically Hong Kong milk tea foam, it’s a rich, silky drink made to celebrate our local culture.
