Some things just are.

Buffalo wings, blue cheese dip and carrot sticks just are.

People drifting to the left and blocking you as you increase you pace to overtake them and then as you readjust to try to get past them on the right they drift to the right leaving you both amazed and annoyed at their ability to stop you from walking just are.

Hotel room service cheeseburgers on vacation at midnight being the best thing you've ever tasted every single time just are.

The feelings you get when staring at the stars too long about how small everything is in the grand scheme of things just are.

Some facts about the universe are simpler and more enjoyable than others. And thankfully, one of them is that buffalo wings, blue cheese and carrot sticks just are.

Step 3 - place your two perfectly smashed patties onto a toasted, buttered bun along with whatever toppings you want. In this case with the Oklahoma fried onion burger, there are fried onions, two sliced of American cheese and salt. No sauce, no junk, nothing to cover up the masterpiece of simple joy that this burger is. Just divinity, and the comforting knowledge that through honing any craft day by day, we can become closer to something greater than ourselves.

Step 2 - topping the smashed beef with toppings. Paper thin onions and wagyu beef fat cooking together on the grill becomes a next level flavortown spectacular reeeaaal fast. While we have our own way of doing things, the man we have to thank for the idea is George Motz. If you've never heard of him, watch a few videos because he makes the topic of hamburgers feel like one of the most interesting things to ever exist in the culinary world. Or ever maybe. He's just a lot of fun but he knows what he's talking about.

Step 1 - smash your balls ofhand-ground beef on the griddle real good. Get those edges real crispy. We use pure wagyu fat in our grind which when rendered out is what gives our burgers the "it" or the X-factor. Hard to put your finger on but definitely there. Why is Ryan the temp the most magenetic person in the office? No idea, he's just got "it".

I learned a new word the other day when discussing Graceland with someone, and that is that we are a "simulacrum". What we've created, which is also what resonated strongest during the lockdown years when homesickness began to hurt a little too deeply, has been the IDEA of American culture. Are we a classy dive bar or a classy bar that's kinda divey? Are we even a bar anymore if we're only really known for food? Does any of that even matter as long as the wheels keep on rolling?

Ultimately the goal was to cut the best cross section possible to transport you into a fantasy world. The times we're throwing back to themselves were plagued with dissolusionment, violence and unrest. The flower power stuff is a fantasy, what was real and tangible only existed for a brief moment.

Amidst, in spite of, or as a result of all that, you had The Beach Boys. Sly and the Family Stone. Simon and Garfunkel. Woodstock 1969. Worlds being conjured from nothing, musical ideas that had never been dreamed of, and a cultural revolution too outrageous for many too accept.

If you can enjoy getting lost in the worlds created by some of the geniuses we have been lucky to share the earth with, you'll always feel at home here.

This is just a small handful of some of the events, specials and themes we've run over the years. There is a sizeable number of people who have made their way out to every single one, and we're always sort of amazed at the postivity that can be thrown our way when we're just doing the best we can the replicate authentic Americana.

Anyway let's not shpiel too hard today, what are some fond favorite specials of the past and what should we tackle in the coming year?

Handmade fried wontons with American fillings that you'll find to be aggressively stupid or brilliant depending on who you are. Tasty is tasty though, and all 3 flavors are that.

Cheeseburger and buffalo chicken are both pretty self explanatory but the real suprise hit has been the cajun shrimp wontons. Based on our seafood boils, they end up being sort of like shrimp samosas. Just, with ranch. Odd, but good. Which should be our description everywhere online.
