Next up in the limelight is Joel . One of the friendly faces that keeps the floor humming and the vibes on point. 🔥

Born and raised right here in Hong Kong with proud Filipino roots, Joel brings a serious mix of rhythm, flavour, and talent to the Bourke’s family.

When he’s not holding down the Bourke’s floor, he’s hitting up the dance floor, writing songs, or singing (he’s a big R&B guy). Word on the street is his debut album is dropping this year, so you definitely want to stay tuned for that 👀.

When it comes to fuel for all that creativity, he loves a good steak and a Tres Leches dessert—a dish he had for the first time recently when he went back home to the Philippines.

It’s never a dull moment when Joel’s in service—thank you Joel for all that you do and always bringing the energy.

June 25th would’ve been the 70th birthday of the late, great, Anthony Bourdain. We’ve built a sandwich in his honour. His favourite sandwich with Crispy Mortadella, Provolone, Dijon Mustard and Mayonnaise, stacked together in a soft bread roll.

From 1-30 June, we’ll be donating 100% of the sales from this sandwich to support the work by (S88: 91/16471), a local mental health charity. All proceeds will help their mission to ensure no one in Hong Kong faces mental health alone through free community mental health services, education, and youth initiatives.

Salty, sweet, crispy, with a good amount of fat from the mayo. Anthony also recommended having it with a good cold beer and we couldn’t agree more. Good food for a great cause, come through for a coupla these!!

We resisted having a Savvy B by the glass on the menu for the first year or so here at Bourke’s -  we couldn’t quite find one that tickled us the right way… Finally, we found the appropriate tickler, in none other than ’s beauty from .

A family owned farm since 1939, Murdoch Hill have long been one of the standard bearers for top quality production in the hills. Sauvignon Blanc aside, they also produce one of the country’s finest Chardonnay’s, ‘Rocket’, which we might have a bottle or two lying around of if you asked the right questions…

NOSTALGIA COCKTAILS: BOURKESSIONA 🇦🇺

Vodka, Passionfruit, Stone’s Ginger Wine, Lime, Carbonated

Before the giant multinational corporations divided up and consumed everything, Australia had its own vibrant soda culture. In the 50’s there were over 500 local independent producers making all kinds of amazing and unique flavours!

Brands like Marchants, Passiona, Cook’s, Crows Nest and Tarax once ruled the scene, but now most are gone. Thankfully, a few independents still thrive, focusing on natural and nostalgia, and the Bourkessiona is our salute to the old school Passiona!

Slice up fresh passionfruit, scoop the pulp, and infuse with Vodka overnight. For spice and a little extra zing, add a healthy measure of Stone’s Ginger Wine (another OG Aussie), some fresh lime for balance, then chill, keg, and carbonate. Simple as.

We serve this one ice cold in the bottle and ice on the side. Super refreshing, this fizzy treat will take you straight back to the good old days.

FROM LONDON, ENGLAND TO HONG KONG! 🇭🇰

The second & final night tonight of pop-up at .hk and we can’t wait. Known for their no-fuss approach to bold, produce-driven cooking, Whyte’s made some serious noise in East London, churning out plates that are equal parts refined and rebellious.

As part of their world tour and Asia leg, we’re very lucky to have them in our cosy kitchen in Hong Kong. , London-born and previous of Brat, Scully St. James, and Kerridge’s Bar & Grill. He’s basically known as THE king of pop-ups for effortlessly capturing the city he visits culture through his food by cooking local produce with influences from his Michelin-starred background and nostalgic childhood inspirations.

Exclusively at Bourke’s, you can expect a unique take on British comfort food with Hong Kong ingredients and flavours. Every dish oozing creativity and flair. Seriously good stuff and nothing like you’ve ever tasted before.

Everything will be served à la carte, so go as wild as you like, have a bite, have the lot, or a few of everything, paired with our cocktails of course and pints.

Bourke’s is excited to host , one Australia’s most recognised whisky brands on Monday 25 May. 🇦🇺

We’ll be joined by the founder, David Vitale , hosting an evening session of tastings and drams. Starting in Melbourne in 2007, David built Starward around a distinctly Australian idea: making an approachable, world-class whisky shaped by Melbourne’s climate, food culture, and Australian wine-barrel maturation.

David will be at Bourke’s pouring his award-winning whiskies from 5-7pm, Monday, May 25th. Come by for free tastings, and great prices on pours.

Make the most of this chance to spend some one-on-one time with one of the true icons of the Australian whisky industry. Walk-ins only. 🥃

One of the visionary Adelaide Hills producers at the forefront of minimal intervention wines in Australia, the wines of are the sort that make you sit up and pay attention. Chenin Blanc, with a splash of Sauvignon for added crunch and zip, this is fun, fun, fun, but has a serious, pensive side to it if you pay attention.

We have just a few bottles left, get it while it’s hot.
