店長Boris 於2017年開始籌備開始清酒吧計劃，並拜訪日本不同清酒吧取經，希望可以為香港市場帶來全新的清酒體驗。
酒林於過去5年積極推廣清酒，希望這些日子都真的無負於初衷：為香港帶來美酒，令每一位到訪的您感受到獨特的酒林清酒體驗！

My journey began 6 years ago and since then I knew it would be a handful and I would need to give you my everything. We started off with a little known sake bar in the alleys of Tai Kok Tsui, my soul goal is to bring top quality sake for our customers and be a top sake bar in Hong Kong. The journey was eventful and after a wonderful roller coaster ride, I’m grateful what we have achieved in the end.
Sakabayashi, we went though our ups and downs and you taught me how to break through. We had our hardships and with our core beliefs helped us broke through these difficult times. What’s left are the positive memories we shared together. The most memorable moment was, I was the first person to give you a taste of too much alcohol and prepare you for what’s to come for the following years😅
Without the tremendous support from our customers none of the dream would come true. Your positive feedback and encouragement allowed me to keep fighting. Thank you!
Without the overwhelming support from our suppliers and breweries none of the would’ve happened. 15 breweries visited us over the years and each has taught me more about sake. Our suppliers kept encouraging and supported us through rough times. Thank you!
Without our wonderful team, none of this would come true. Your sacrifice, dedication and passion helped us achieve what 6 years ago we wouldn’t believe could happen. Thank you!
Last but not least the one person who envisioned Sakabayashi. Rosa, you’re my teacher, mentor, partner and my soul. Without you there will not be a dream. Thank you for your support and encouragement throughout the 6 years.
I believe our time at Sakabayashi has been wonderful and I will always remember the good times we had. We just hit a road block add this time it was hard to bounce back. My journey with Sakabayashi will not end here. Maybe, just maybe one day we can pickup where we left off!
