The red snapper‘s flesh is both delicate and delicious, making it a highly esteemed fish in Japanese cuisine, particularly known for its exquisite white meat

They boasts vibrant red skin and pale pink flesh rich in subcutaneous fat. As a result, the golden snapper is usually enjoyed with its skin intact, creating a visually stunning dish. One distinctive feature of the golden snapper is its eyes, which, in addition to being large like most deep-sea fish, also have a hint of bright golden shimmer within, earning it the nickname ”the golden eye.“

金目鯛肉質細膩，味道鮮美，在日本料理中屬於高級魚種，是日本極具人氣的白肉魚 🏆

金目鯛的表皮鮮紅亮眼，肉色呈淡粉色，並且擁有豐富的皮下脂肪。所以金目鯛一般都是連皮一起享用，呈現料理時極具美感。金目鯛的另一個特點在於眼睛，除了有著多數深海魚的特徵—大眼睛，裏邊還透著一絲的亮金色的光澤，因得「金目之名」
