We have created a menu aiming at higher production combined with lower consumption of raw materials. Our philosophy is based on managing goods in a way that the value of the final product is preserved while the environmental impact is reduced. We follow practices and techniques in the spirit of zero-waste philosophy and combine successfully local and organic products, achieving both freshness in our ingredients and minimum environmental impact.

Βασικό στοιχείο της βιωσιμότητας είναι ισορροπία μεταξύ παραγωγής αγαθών και πρώτων ύλων.Στο μενού που δημιουργήσαμε στόχος μας είναι να πετύχουμε περισσότερη παραγωγή με μικρότερη δαπάνη πρώτων υλών. Η φιλοσοφία μας βασίζεται στη διαχείριση των αγαθών έτσι ώστε να διατηρούμε την αξία του τελικού προϊόντος μειώνοντας τις περιβαλλοντικές επιπτώσεις ακολουθώντας πρακτικές και τεχνικές που διασταυρώνονται με τη φιλοσοφία του zero waste, έτσι συνδυάζοντας αρμονικά τοπικά και βιολογικά προϊόντα έχουμε ως αποτέλεσμα όχι μόνο τη φρεσκάδα των συστατικών αλλά και την ελάχιστη περιβαλλοντική επίδραση.

Στο Ali Vafi’s Garden πιστεύουμε ότι η βιωσιμότητα βρίσκεται και στις επιλογές που γίνονται πίσω από όσα βλέπετε καθημερινά.

Μέσα από το πρόγραμμα «Αλλάζω Συσκευή για τις Επιχειρήσεις», προχωράμε στην ενεργειακή αναβάθμιση του εξοπλισμού μας, με στόχο τη μείωση της κατανάλωσης ενέργειας και του περιβαλλοντικού μας αποτυπώματος.

Γιατί ακόμη και οι αλλαγές που δεν φαίνονται, μπορούν να κάνουν τη διαφορά.
