Fava Beans with Smoked Panchetta

Fava Beans... eaten by Mediterranean civilizations from antiquity, the food of the poorest in Greece especially during the last century, and because of that was loved and hated. Today Fava belongs to the remastered plates of Greek cuisine. Eated all over Greece in many variations like cold with onion, with octopus, with capper, hot, spicy, with cheese, with ragout. The original bean for Fava is called "lathouri", can grow in hard environments and that's one of the reasons that became so popular.
