Green Bean Salad with Quinoa and Cherries 🍒
Ingredients:
- 1 cup cooked quinoa
- ½ cup cherries, pitted and halved
- A handful of chopped almonds
- 3 cups round green beans
Dressing:
- 4 tbsp Kalamata PDO Extra Virgin Olive Oil
- 1 tbsp balsamic vinegar
- 1 tsp mustard
- Zest of 1 lime
- 1–2 tbsp lime juice
- 1 tsp honey (optional, if the cherries aren’t very sweet)
- Salt & freshly ground black pepper
Instructions:
- Boil the green beans for about 5–7 minutes, then drain them and place them in ice water so they stay crisp and retain a nice texture.
- Place all the salad ingredients in a bowl.
- In a separate bowl, mix all the dressing ingredients and pour over the salad.
- Finally, top with extra chopped almonds.
