Green Bean Salad with Quinoa and Cherries 🍒

Ingredients:
- 1 cup cooked quinoa
- ½ cup cherries, pitted and halved
- A handful of chopped almonds
- 3 cups round green beans

Dressing:
- 4 tbsp Kalamata PDO Extra Virgin Olive Oil
- 1 tbsp balsamic vinegar
- 1 tsp mustard
- Zest of 1 lime
- 1–2 tbsp lime juice
- 1 tsp honey (optional, if the cherries aren’t very sweet)
- Salt & freshly ground black pepper

Instructions:
- Boil the green beans for about 5–7 minutes, then drain them and place them in ice water so they stay crisp and retain a nice texture.
- Place all the salad ingredients in a bowl.
- In a separate bowl, mix all the dressing ingredients and pour over the salad.
- Finally, top with extra chopped almonds.

Zucchini Olive Focaccia Sandwich🥪

Marinade:
- 1–2 tbsp lemon juice
- Zest of 1 lemon
- 1 large green zucchini or 2–3 small ones
- A pinch of dried mint
- Freshly ground black pepper
- A pinch of chili flakes
- 1–2 tbsp Extra Virgin Olive Oil, extra for serving
- 2 tbsp Green Sliced Olives

For serving:
- 2–3 tbsp katiki cheese/whipped ricotta (adjust depending on the size of the focaccia; you want a generous layer, possibly a bit more)
- Focaccia
- Fresh mint for garnish

Instructions:
- Slice the zucchini into very thin strips (using a peeler or mandoline). Lightly salt them and let them drain for about 5–7 minutes, then transfer them to a bowl.
- Add all marinade ingredients and mix well. Let it sit for about 10 minutes.
- Place the focaccia as the base, spread the katiki cheese on top, and add the marinated zucchini.
- Garnish with fresh mint, drizzle with Extra Virgin Olive Oil and serve.

Edible Spring Garden🌸

Ingredients:
- 250g hummus (as a base, possibly more to help hold the toppings)
- 2–3 tbsp Green Olive Paste
- Cucumbers: cut into sticks of different sizes or halved
- Fresh seasonal vegetables (such as carrots, cherry tomatoes, cucumbers, radishes, and celery leaves), cut into different shapes and sizes.
- Extra Virgin Olive Oil for drizzling

Instructions:
- Spread the hummus as a base on a serving plate.
- Add the green olive paste and gently spread it over the hummus.
- Arrange the vegetables on top, creating a colorful palette.
- Drizzle with Extra Virgin Olive Oil before serving.
