Meet AMMONITE: born from a rare, century-old vineyard on Santorini and aged over 15 months in the island’s volcanic mud (with a little time in new French oak for good measure), this Gaia Wines creation has serious structure, serious length, and even more serious aging potential.

The name comes from the ammonite fossil on the label - GAIA’s emblem - its swirl echoing the same Fibonacci spiral found in nature.
