On they go   130-140C smoke for about 6 hours, or until they hit 95C internal. I want these babies to fall apart.

Impromptu beef on the today. Trying a new approach to ensure 1. They’re cooked to a temp that melts the fatty gubbins and 2. They’re not cooked too long producing chewy exteriors. Also trying them from room temp to see what that does. Going to be a few hours…

6 hours at around 110 - 130C.  Flavour good but not cooked at high enough temp, plus the amount of meat meant it should ...
