Orange And Maple Glazed Gammon Joints Smoked Up For Christmas.

What do you do when some of your guests can't make it for Christmas but you've already soaked it......You cook it up and make them dribble at home!!!!

If only you could smell this! 🤤

One from last weekend.
Spatchcock Roast Chicken rubbed with Big Fat Greek Seasoning, rang true with definite Greek vibes. Served with BBQ Roast Potatoes (could have done with 20 mins extra to really crisp up). And Mediterranean style vegetables also sprinkled with Big Fat Greek Rub.

It was a winning combination, requires a bit of refining on my part but I will certainly revisit this soon!

Korean Style Steak Wraps using "Korean you know you for Seoul" rub and Sweet Mini Pepper Bacon Wrapped Poppers stuffed with cream cheese fresh chilli and cayenne pepper. The poppers turned out amazing taking on just the right amount of oak smoke and with the perfect heat. Much easier to control the temperature than stuffing fresh chilli's as all the heat is in the cream cheese mix.

Last night's of .q BBQ Meatloaf recipe. First time I have ever had meatloaf and it's certainly going to be a firm favourite going forward!
It smelt amazing and tasted even better, well worth a try if you haven't already.

I paired it with a Texas Mop from book and the pairing went a treat.

Was certainly a typical British smoke up with lashings of rain and gale force winds but we managed to find a bit of shed space to get this going 😂

A Chipolata Bacon lattice stuffed with freshly made Sage and Onion stuffing on the for 2 and a bit hours.

Crispy bacon on the outside, with a perfectly cooked sausage in the middle.

So this was what I was smoking Friday evening. Two batches of Beef Jerky. Testing out a couple of variants of marinade. My Hoisin variant turned out great will certainly be doing more of that recipe in the future.

Pork Butt Smoked In an entirely homemade Barrel smoker this weekend. 110°C for 9hrs and then 140° for half hour to just finish it off. Beautiful flavour using our Oak Battle Smoking chunks (DM me if your intrested in a bag).

Here's a throwback to my first smoke on a BBQ earlier this year. This is where the addiction started! Spare ribs rubbed with home mixed grillstock rub and oversauced with homemade grillstock BBQ sauce!! They were amazing dispute the fire state of the old BBQ and having to sit in the rain to change the vents every 5 minutes!! 😂

Rustles a few steaks up on the BBQ tonight. A mix of rump and sirloin. Couldn't have been better and used my favourite steak rub Chefs Secret wood fire seasoning!
Compliments the steak with subtle flavours without taking away from the fact it's a slab of prime beef!

Lovely prime Beef steaks supplied by you always know your in for a treat when it's a bridge farm steak!!! Farm to fork within a mile!
