Here, I make compotes and chutneys from fresh, locally sourced
ingredients for a better flavoured compote. I use aromatics such
as Cinnamon, Clove, Peppercorns and Coriander Seeds for a subtle
yet distinctive taste. With the addition of white wine and balsamic vinegar, these
compotes are different from any you'll find in the shops.
