Let’s talk Menu By Hatter at Lost Pub Co Westcliff….

As a Chef, over the years you get to try, taste and cook so many different types of food and this can sometimes play mayhem when creating a menu! This can lead to over complicated menus with no actual direction at all or style.

Imagine a chef removing all that pressure of trying to fit it all in to one menu, only to think F #%k I wish I could cook this or try this !!

So yes folks im chucking the usual out the window and cooking what the f**k I like to eat and that’s food with no rules !!

My menus will change with my mood and what’s trending, so this will be a full on journey with food, beer & dirty cocktails that fill my head on a daily basis.

This could mean Lobster tacos, Beef shin & oyster pies one day and the next day it could be full on raw vegan fair then Friday it might be a trip to New Delhi or a full hop over to New York for the best damn dirty salt beef bagel with German sauerkraut & deli mustard.

You say “That’s not right” but i say “Well my beer changes on a daily basis and so does my cocktails” so this means why can’t my menu change when I like.

Obviously I will have some core dishes such as blood sausage Scotch eggs, wild boar sausage rolls, pig ear fries with Korean salt as well as a whole load of pickles & cheeses to pick from as well as my love of vegan food I will aim for a 50/50 menu and try to keep the allergens low.
