Carne cruda is very similar to tartare. It consists of high-quality raw beef, typically tenderloin or sirloin, which has been finely chopped or minced and carefully trimmed of fat and sinew.
Traditionally, it's seasoned with a variety of ingredients such as onions, capers, parsley, and raw eggs. However, Italians typically favor seasoning with olive oil, lemon juice, salt, pepper, garlic, and, of course, Parmesan cheese.
