At exactly 11:30 PM (Vietnam time, GMT+7) on April 30, 1975, Company Commander Bùi Quang Thận raised the flag of the National Liberation Front of South Vietnam atop the Independence Palace, in the joy and anticipation of the entire nation.

The Ho Chi Minh Campaign achieved complete victory.

VÂN CÙ VILLAGE – THE ORIGIN OF VIETNAM’S TRADITIONAL PHO 🍜

This is Vân Cù Village — a small village in Nam Định, where the craft of making phở has existed for over 100 years.

Here, people don’t simply “produce” phở noodles.They make them as a craft passed down through generations.

👉🏻 Rice is carefully selected.
It’s ground, steamed into thin sheets, then cut while the noodles are still at the perfect level of moisture.

Every step relies on experience handed down over time, rather than modern machinery.

Freshly steamed noodles from Vân Cù have a very distinct texture:
soft but not mushy,
springy without being tough,
and when paired with hot broth, they hold and carry the full flavour beautifully.

Perhaps that’s why, from a small village,
these noodles have traveled far following generations of artisans and become an essential part of Vietnamese food culture.
