More than stock Auditing

With over 25 years of experience in the hospitality industry I feel I have heard it all but there are still a few surprises out there!

I’ve had a run of success and some not so good but in every situation I have learned a valuable lesson and now I relish in passing those lessons on to my clients. With some stock auditors it might be a case of getting a result of a surplus or a deficit. With the way I work I look in to why this is happening and help the clients put an action plan together and assist wherever possible. Through auditing I have managed to help catch a few thieves by ‘mystery dining’. I run staff training programs to assist clients on getting the most out of their staff service and sales.

I’ve worked with a lot of chefs in my time and also been one and the underlying theme I see in the trade is that where they (On the most part) create some amazing food, they aren’t capable business people and are unable to cost their menus. This often gets overlooked by clients which is where I come in and provide a full costing and training session.

I see so many new wine lists on a weekly basis but there is often little planning on the launch. If your wine supplier isn’t costing the list, providing tasting samples or even running a tasting session then you are missing a trick. With my contacts in the wine world I can help.
