One thing is for sure, we are missing the monthly social & can't wait to be back at it again, dancing, eating & spilling drinks all over Brew & Bite... 💃🕺
We know you're all missing going out and enjoying the good stuff on those Thursday nights, so here's a little bit of help, so that you can re-create it for yourselves. 👏
So here's a little gift, from our pal The Swordmaker ; A lovely little ditty called the 'Raspberry Thyme' a gin based cocktail, with a lovely herbal complexity.

😍 'RASPBERRY THYME' ⏰
This is a delicious cocktail for all of you GIN lovers out there, seasonal & beautiful. The cocktail is based on a classic style of cocktail, called the 'Smash' - Involving muddling and shaking fresh fruit and herbs to get really vibrant flavours.
❗️Crushed ice is ideal for serving this drink, but we can use cubed ice, for accessibility.
WHAT YOU'LL NEED❓
✅A short rocks glass
✅Cocktail Shaker & Strainer + Fine Strainer (Sieve will do)
✅Muddler / End of a rolling pin / Something that looks like it will do some damage to fruit and herbs
✅Plenty of cubed ice (Plus crushed ice if you can make/acquire it)
✅4/5 Plump Fresh Raspberries
✅2/3 Sprigs of Fresh Thyme
✅15mls Fresh Lemon Juice
✅20mls Sugar Syrup
✅12.5mls Chambord
✅37.5mls GIN (You can choose, but a gin leaning towards the more citrus/herbal botanicals would be ideal)
METHOD ✏️
1️⃣Prepare your rocks glass by filling with crushed/cubed ice.
2️⃣Take 3/4 Raspberries & 1/2 sprigs of Thyme and add them to your shaker.
3️⃣Muddle/Squash the fruit and herbs, until they are sufficiently broken down & you can see/smell the juices and flavours well.
4️⃣Add your Sugar & Lemon Juice (Before the Gin & Chambord), to your shaker.
5️⃣Add the Gin of your choice & the Chambord, to your shaker.
6️⃣Fill your shaker with CUBED ice and close well!
7️⃣Shake HARD, for around 10 seconds if you are serving with crushed ice - 15/20 seconds if you are serving with cubed ice.
8️⃣Open your shaker, enjoy the aroma & DOUBLE strain (Pour through the normal strainer AND a fine strainer/sieve. This is to filter out the pieces of Thyme and Raspberry.
9️⃣Garnish your drink with the remaining Raspberry & slot the remaining Thyme sprig down the side of the glass at a nice angle & a straw if you'd like.
