INDIGENOUS REVIVAL: GRAPES YOU’VE (PROBABLY) NEVER TRIED

From Xinomavro to Baga, these native grapes tell stories of place, tradition, and rediscovery — a delicious journey through wine’s hidden heritage.

Homemade Stracciatella - Silky, creamy, and ridiculously satisfying to make from scratch.

Ingredients
• 2L whole organic milk
• 1/4 tsp rennet
• 20ml water
• Cream
• Salt, to season

Method
1️⃣ Heat the milk to 32–36°C
2️⃣ Mix rennet with water, add to milk & leave for 10 mins
3️⃣ Remove the curds
4️⃣ Heat the whey to 80–82°C
5️⃣ Warm curds in the whey, then stretch & fold 2–4 times
6️⃣ Cool the curds and pull into strands
7️⃣ Add cream until you reach your perfect consistency & season to taste

Serve with warm bread, tomatoes, olive oil, or just eat it straight from the bowl. No judgement. 🤍
