Helles is back 🌞

A long overdue return of a true staff favourite, Helles Classic German Lager is ready for a summer of warm days and long evenings with plenty of sunshine (fingers crossed 🤞🏼🤞🏼🤞🏼)

One of our greatest technical brewing challenges lies in producing a beer style that leaves no room for error, with no bold flavours to mask mistakes or imbalance. We match the water profile of Bavaria, the best German grain and tettnanger hops to achieve this.

By using a decoction mash to develop complex, rich malt flavours, the outcome is a malty light bread-like flavour, whilst staying crisp, delicate and refined. Cloudwater Helles is made for maximum refreshment and drinkability - a nod not just to German brewing, but traditional beers the world over.

A very special Barrel-Aged Imperial Stout made in collaboration with our friends at Elmeleven from Malmö in Sweden, with Banana, Coconut, Vanilla and Cinnamon for a dessert-like treat.

Utilising our My Continuous Improvement Imperial Stout as a starting point, we aged the base beer in a rum and bourbon cask for 2 years, allowing sweet oak-driven notes to seep into every drop.

We have then blended this rich decadent base with sweet summer flavours of delicate ripe banana, subtly toasted coconut and vanilla with just a whisper of cinnamon for extra warmth. The result is an experience of sophisticated tropical warmth enveloped in a velvety, luxurious body.

A chair is not a house 🪑

A Pale Ale for the listeners. Using the same beer base as our recent cask-only release A Room Is Still A Room, this soft blend is an intricate symphony of flavour, weaving layers of Sabro Cryo, Comet and Simcoe hops.

Relish in the sweet coconut, sharp grapefruit and stone fruit notes, culminating in a crescendo of wild dankness on the finish.

Essence & nexus 🛸

A deep dive into the impact of cryogenically frozen hops, focusing on the differences between Cryo Hop and Cryo Fresh Hop, in flavour, aroma and visual appearance.

Nexus and Essence are two IPAs made in the exact same way, featuring the same hops Simcoe and Krush, with the only difference being the way the hops have been processed.

Cryo hops are dried and processed before being frozen, creating more concentrated hop oils for maximum efficiency in dry-hopping. Meanwhile, Cryo Fresh hops are flash frozen ‘wet’, locking in bright and fresh characteristics and allowing wet-hop style beers to be brewed all year round.

We’ve crafted two IPAs, one using Cryo Hop and the other Cryo Fresh Hop, so we invite you to lean into this exploration, form your own opinion and help us continue to develop modern hopping processes.

The return of our Experimental v-series, DIPA v20 is inspired by a presentation at BeerX by Alix from Lallemand.

Lallemand undertook a study of the natural thiol releasing potentials of various different yeast strains they develop. They found that their lager strain, Diamond, was capable in controlled lab settings of releasing 3SH heavy (grapefruit, citrus) thiols - 2-3 times more than their other yeasts.

This got us wondering - what if?
What if we used this yeast, in conjunction with hops which we know to have a lot of bound thiol precursors (in this case mainly Cascade and Columbus) in a co-pitch, starting with Diamond and finishing with Lallemand Verdant ale yeast, to attempt to release these thiols into a grapefruit thiol/ester heavy DIPA v20?

We paired the Columbus in dry hop on this with Centennial and Loral, both heavy on the citrus and grapefruit in themselves.

With these in mind, and using the guiding principle that our v-series is not and has never been solely hazy DIPA focused, it made sense to our brewers to keep the grist lighter than usual for a base and body presentation which complements the already delicate nature of the highly volatile thiols.

Mango fruit sour 🥭

This Mango Fruit Sour is based on a recipe we made all the way back in 2017!

We’ve packed 500kg of mango puree into this ripe and juicy sour, coating every last drop with rich tropical aromas. We’ve left the mango completely unaffected by any other adjuncts, allowing this luscious fruit to shine all on its own.

Pumping up the ABV to 8% we’ve reduced the residual sugars to focus on the natural tartness locked away in mango and giving it a big old punch.

Persistence is utile VIII

The 8th edition of our Imperial Coffee Stout series ‘Persistence Is Utile’, sees us team up with coffeemasters from Amsterdam.

We’ve incorporated 40kg of Yunnan Red Sparrow beans, which underwent a thermal shock process, which sees coffee cherries undergo high heat, then immediate cold cooling. The dramatic temperature shifts create a ‘stress response’ in the bean, resulting in intense, complex and fruity notes.

This is then seamlessly blended with a heavy foundation of chocolate and Munich malt, intensifying the decadent experience of this Imperial Coffee Stout, Persistence Is Utile VIII. Cacao nibs and vanilla are added to temper any sharpness from the coffee, culminating in a drinking experience defined by luxury and profound richness while maintaining a remarkably clean, thick, and smooth mouthfeel.

Think of this like an alcoholic iced coffee.

The garden blooms again🌸

A paired DDH Pale Ale combo, exploring exciting hop varieties from the USA and New Zealand (alongside Eternal Bird Sings).

The Garden Blooms Again is a study on using a combination of classic and modern American hops, with Strata and Centennial alongside the addition of Nugget CGX, blending orange citrus and bergamot with sweet dankness and savoury floral notes.

Centennial is now a staple in modern brewing, strongly associated with intense citrus, floral, and pine notes, whilst Nugget is the oldest of the featured hops in this brew, it provides a savoury and herbal backbone to the beer. As a relatively new hop, Strata leads the way with its modern fruity aromas alongside dank qualities.

To complement the citrus, savoury and and floral notes of the US hops in The Garden Blooms Again, we opted to use Kveik yeast rather than our usual house yeast. Due to the unique fermentation properties of this yeast strain, it converts more of the available sugars into alcohol, resulting in this DDH Pale with a cleaner finish and producing tropical fruit esters, including tangerine, pineapple, and mango flavours that will leave your brews bursting with vibrant and exotic fruit notes.

A paired DDH Pale Ale combo, exploring hop varieties from the USA and New Zealand (alongside The Garden Blooms Again).

For Eternal Bird Sings we explore the complex and intense nature of New Zealand hops by layering Nelson, Motueka and NZ Cascade, crafting an experience of tropical juice and fruity dankness.

We’ve then amped up this brew with the addition of Fresh Nelson, Fresh Wai-iti and Fresh Waimea Hopkiefs from Freestyle hops. These liquid hops are added to the dry hopping process to further amplify and lock in as much flavour in the liquid as possible.

The return of a staff favourite, Volley has now been SUPERCHARGED

Allow us to indulge in a spot of California dreaming. Inspired by the modern West Coast beers we delight in drinking, this IPA pops with juicy tropical fruit with incredible melon and citrus flavours. This Volley is a little hazier than you may remember but trust it still packs the same fresh, crisp flavour, enhanced by locking in the freshest hop profile from the Supercharged process, making it an incredibly easy-drinking and clean experience.
