The creation of “Paleokerisio” (translated to ‘Old Times’) wine is the most prominent example of the revival of a traditional wine - the famous semi-sparkling wine produced in Ioannina since 1600AC.

It is made in the old style of the region. The grapes are fermented on their skins (10-12 days) and in oak, it's a tiny bit on the funky side with biscuity notes, but the wine is also off-dry with just enough residual sugar to make it super easy drinking!

One of our somms presents her fav wine of the moment!

An amazing Traditional Method Brut Rose from 7th generation farmers Michael and Jocelyn Lightfoot, following a holistic approach to farming and adheres to organic and biodynamic principles.

A serious rose sparkling, red berry led with mellow bready autolytic cahracters, vibrant mousse and great length!

The geeky stuff:
75% Pinot Noir, 25% Pinot Meunier.
Whole cluster grapes are pressed with only some having a short time of skin contact.
Primary fermentation in stainless steel with full malolactic, then second fermentation in the bottle with 11 months on the lees before disgorgement .

You'll be trying 5 wines, from unique, upcoming and emerging wine regions such as Czech, Texas, China & Lebanon, all from the award winning list of Diogenes the Dog.

Our expert senior somms will talk you through the where and what each wine, as you nibble on delicious charcuterie nibbles amongst fellow wine lovers.
