We’re nearly there… and it’s all starting to feel very real now.

The taps are in, the cold room’s ready, and there’s a lot going on behind the scenes (and a lot of barrels everywhere). We’ve even been spraying our own Doghouse logos and it’s all coming together.

Big shoutout to our new GM Jake and Mateo, who’ve been working non-stop on the cocktail menu and building the bar team.

Doors open Thursday 30th April at 4pm and we can’t wait to see you there.

Doghouse Distillery x Clays 2026 🍹💥

Eight amazing bartenders from took on the brief of creating a new Spritz for the Clays Summer Menu with the amazing London made ‘Doppelganger Aperitivo’ from Doghouse Distillery.

Each bartender brought their own style, story and approach to the table. The level across the board was seriously high. Thoughtful, creative, and super impressive!

After a lot of tasting by the judges and a very tough decision, one cocktail had to win. Huge congratulations to Andre and his ‘Amber Sky Spritz’, which has earned its place on the new Clays menu launching 27 April.

A big thank you to all eight bartenders who put so much into their creations. Keep an eye out for the Amber Sky Spritz and head to a Clays for an amazing fun experience with delicious food and drinks to boot!

Before our Whisky becomes Whisky.. it is ‘New Make’ or ‘White Dog’ or ‘Moonshine’ as we like to call it - as a nod to our prohibition inspired branding..

75% Corn, 8% Rye, 17% Barley - freshly distilled.

Then into the wood it goes - always into New Virgin American Oak Casks. We follow the Bourbon process to the T at Doghouse.

Some of it is only aged for a year and then is bottled as our ‘Cask Aged 1 Year Moonshine’..

And the rest is aged for 3 years, at which point it becomes Whisky! ‘American Style Corn Whisky’ to be exact.

Amazing that wood and time make such an incredible liquid - and something so different from the liquid it starts out as.

You can buy a mini set on our website which includes a 5cl bottle of our Unaged Moonshine, 1 Year Cask Aged, 2 Year Cask Aged and Whisky - taste time itself!

We are knee deep in refurb at our soon to be open ‘Doghouse Distillery Bar’ in Clapham!

Barrels have arrived, staves have landed (can’t say what for… yet!), the sign’s arrived, the team search is in progress, and we’re getting very close now!
