Roasted Aubergine, Harissa, Whipped Tahini, Honey

A burst of Middle Eastern-inspired freshness with a base of our homemade raw red cabbage sauerkraut, adding crunch and tang. Roasted Spanish organic spring aubergines and Italian fennel for seasonal bridge, hinting at warmer months ahead. Whipped garlic and tahini dressing, nigella seeds, and honey stitch the dish together with fragrant, bitter, and spiky flavours. The house rose harissa, made from the chilli skins and seeds harvested from our Sriracha sauce, gives it punch.

Oniric Brisat. From Penedes, Spain. Made with the same grapes found in Cava (Xarelo and Parellada), this orange wine has flavours of citrus, peach, baked apple pie, and a hint of spice. “Brisat” refers to the traditional Catalonian technique of extended skin maceration. “Oniric” means dreamer — hence the flamingo with its head in the clouds.

Gratin—There are few better kitchen aromas than a washed-rind cheese bubbling away in the oven. Here, creamed leeks and courgettes meet garlic and thyme, all tucked under a golden, molten layer of Taleggio. It could stand alone, but alongide a ribeye? That’s the kind of decision you won’t regret.
