PASIÓN
Pensador Ensamble, passionfruit, lime, vanilla, shaken and served in a coupette with a shot of prosecco.

TOSTADO
Pensador Ensamble stirred with sesame-infused Dolin Rouge and orange bitters, served with expressed orange oils.

PIÑA BRAVA
Pensador Ensamble, pineapple and jalapeño-infused slushy, served frozen.

The Manhattan.

One of the enduring heavyweights of the cocktail world. Our take pairs Woodford Reserve with our own vermouth blend - Dolin Rouge, Martini Riserva Rubino and Lillet Rouge for a touch more tannic dryness, rounded out with ruby port and Pineau de Charentes.

Served in a coupette, with expressed orange oils and a Maraschino cherry.

TRES
A stirred, spirit-forward Campari number featuring Arette Reposado and Aker Dry, with a hit of grapefruit bitters.

SEDA
Arette Blanco and Campari brought together with Dolin Dry and topped with mandarin and bergamot soda.

AMARGO
A frozen slushy of Campari, Arette Blanco, grapefruit and lime.

The El Siete Martini.

Tequila has aromatic components reminiscent of gin - floral, herbaceous, mineral - but without the juniper.

G4 Blanco 108° is a directo expression, bottled at still strength, giving us the freedom to add plenty of our favourite vermouth for a distinctly wet style, whilst keeping it bracingly cold and barely diluted.

Aromatised with lime zest and served with pickled peppers, it’s an immediately recognisable but subtly unique aperitif.

Don Fulano Blanco shaken together with rosemary, grapefruit and lime.

SUEÑO
A tart, floral frozen slushie of Fulano Blanco, mango, chamomile and lime.

SEDA
Don Fulano Blanco combined with corn tea, honey and lemon. Poured over ice, and lengthened with soda.
