She might not be the prettiest pizza, but she’s glorious nonetheless. We spend 12 hours making a rich & soft beef shin ragu with red wine and a touch madeira, and then do what any other sane person would do - put it on a pizza and add bright pickled chilli, fresh mozzarella, tomato and lashings of aged parmesan. A perfect winter warmer 🥶➡️🥰

We make all of our fresh pasta every day, and extrude through bronze for rough edges that cling to sauces, and use a blend of Wildfarmed Grain and Gilchester’s semolina.
This is reginette - like a frilly pappardelle with mega sauce-catching frilly edges - just after being made this morning.

Btw, our GM Marion is still speed eating pizza with the “fold-slice-and-stuff” technique 🍕😋
