Meet Ilia Bushmakin, our new Head Chef at ZIMA.

Originally from Siberia, Ilia grew up with the flavours that sit at the heart of our menu. He began learning to cook at 15 and has spent the past 20 years in hospitality.

Some of you may already know him. Ilia previously spent six months as Sous Chef at ZIMA Soho before taking the lead in the kitchen in our Notting Hill restaurant. Now he’s back in Soho, taking on the role of Head Chef.

His approach is simple: keep the classics classic, with the familiar flavours and quality you come to ZIMA for, while bringing his own interpretation through a modern lens. Alongside your favourites, expect seasonal dishes inspired by the food he grew up with.

Autumn is best enjoyed around the table. From mushroom-filled blinis in dill butter sauce to roasted vegetable salad, wagyu beef and pork dumplings with a little kick of adjika, and tvorog-filled blinis with caramelised apples. The only difficult part is deciding what to order.

Meet Aidana 👋 If you’ve been to ZIMA, there’s a good chance she has looked after your table.

Originally from Bishkek, she once had a British guest ask her where to find kumis in London (a question that earned a place among her favourite ZIMA memories). Her favourite on our menu: borscht with pirozhki.
