V&T - our non-alcoholic answer to the sherry and tonic. Here, we've used a mix of salts; potassium, magnesium and sodium bicarbonate to neutralise the acids in a 30 year old sherry vinegar — this creates a layered minerality to the drink. Together with pineapple, ice verjus and tonic, it's fruity, rich and refreshing serve.

Meet our talented bar supervisor Violeta Bogdanova. Latvian-born Voileta has been a true asset to the Baccarat team since she joined us in 2021, following a 7 year stint working across some of London's most prestigious bars. ⁠

Violeta loves working with peaty whiskies and mezcal for the smokiness, she's also a big fan of savoury and pickled ingredients. ⁠

She's equally as creative outside of the bar, where you'll find her gardening - or crocheting on rainier days. ⁠

Served in a Harmonie Highball, with this drink, we used the classic method of flavour extraction, steeping ingredients in Clarin, allowing the artichoke, tarragon and smoked almonds to unwind and unfold into the powerful Haitian sugar cane spirit. ⁠
