In 1943 a Maitre d’ called Ignacio “Nacho” Anaya accidentally invented Nachos. When a group of military wives unexpectedly visited a restaurant just over the Texas border and the chef was nowhere to be found, Ignacio threw together tortilla chips, cheese and jalapeños to feed them.
