Driving footfall (give people a reason to come in)
Increasing spend per head (pairing + upselling)
Creating staff engagement (clear, easy-to-sell focus)

It’s National Cocktail Day 🍸

Which, let’s be honest, is basically a public service announcement for the hospitality industry.

For me, cocktails have never just been about the drink.

It’s the theatre behind the bar.
The interaction with the guest.
The confidence of the person making it.

You can give someone the same ingredients, but it’s the way it’s made and delivered that turns it into an experience.

That’s what people remember.

So whether it’s a classic done properly or something a bit more creative, today’s the perfect excuse to enjoy one.

Apparently it’s National Puppy Day today 🐶

If hospitality teams were dogs, what would they be?

🐕 The Labrador – always happy, loves people, never stops moving
🐕 The Border Collie – running the floor like a pro, knows everything that’s going on
🐕 The French Bulldog – great personality, a bit stubborn, still everyone’s favourite
🐕 The Chihuahua – small but somehow running the whole place

Every great venue has a mix, and when it works, it really works.

First day of spring 🌸🍸

Longer days, lighter evenings, and the perfect excuse for something fresh behind the bar.

Today’s choice: The Gin Daisy

A proper classic that goes all the way back to the 1800s, light, refreshing, and exactly what you want as we move into spring.

Think of it as a grown-up lemonade with a bit of personality,
Gin, citrus, a touch of sweetness, and a splash of soda to bring it to life.

It’s one of those drinks that reminds you what hospitality is all about, simple ingredients, balanced properly, served with a bit of energy… and suddenly you’ve got a moment.

Funny thing is, cocktails like this are where a lot of modern classics came from, margaritas, sidecars, all built on that same balance of sweet, sour, and spirit.

Spring’s here, so it’s time to start thinking lighter, brighter, and a bit more refreshing.

We talk a lot about standards, service, and operations, but what guests often remember most is how they felt.

Exciting times working alongside Exclusive Events Ltd at The Three Arches, Sheffield.

From a consultancy perspective, it’s been great to support a venue that’s fully committed to building a diverse and commercially strong events programme, from high-energy comedy concepts like Gong of Steel, to premium tribute experiences and live entertainment that genuinely drives footfall.

What stands out is the willingness to innovate. Too many venues stick to “what’s always worked,” but here we’re focused on creating experiences that give customers a reason to choose this venue over any other in the city, and crucially, to come back.

The combination of strong branding, clear event positioning, and consistent delivery is already showing real potential. There’s a solid foundation here to build something that not only fills rooms, but builds a reputation.

Looking forward to seeing these events continue to grow and to playing a part in shaping what’s next.
