Here it is our first ever low and slow cooked bbq’d char siu pork … mmmmm delicious, made for our new bao line and rice dishes …. Fresh from our own in-house smoker …. Yummily delicious.

We have just launched little bao boy (find it on Uber and Just eat) which is proving to be a very popular alternative to our in-house bao’s.
Little bao boy’s char siu is made using their own brand shredded pork, while in-house our char siu pork is made to an authentic Chinese recipe.
First we trim and prepare the pork joint, then smoke it and as soon as it comes out of the smoker it is put straight into our marinade for 24 hours, then taken out again, roasted and continually basted in the marinade to give that authentic Chinese smoked flavour, complimented by the sweet char siu flavours – an absolute winner.

Our pitmaster has full licence to do whatever he wants, so is taking full advantage and producing a different flavour every month.
This month’s in-house pulled pork is a mix of USA and UK heritage. First we smoked the pork joint then put it in a Lilley’s Dark Cider marinade, creating a deliciously sweet, smoky flavour.
