The family brewery is called Kotobuki Shuzo and is based in the town of Tonda outside Osaka. As well as brewing great saké, they were the first brewery to start making craft beer in Osaka. Brewery Tour + Sake & Cheese Tasting

On Sunday 15 February, we will be hosting our first sake and cheese tasting.

The afternoon begins with a guided brewery tour led by Kumiko Hashimoto, head brewer at Dojima, followed by a seated tasting of three sakes from Dojima Brewery and three cheeses from Provisions London, an importer of artisan food and wine.

Guests will be guided through a carefully curated pairing of fresh and cellar-aged sake, paired with cheeses chosen for texture, depth, and umami — a rare opportunity to explore how time, structure, and ageing shape flavour.

Happy World Sake Day!

Today we raise a glass not only to World Sake Day, but also to our own press day of Kakehashi Autumn 2025 – the moment when our carefully nurtured sake is released from the press, carrying with it the weight of tradition and craft.

The very first glass of this fresh sake was then carried to our shrine, offered in gratitude and respect for the heritage that guides us.

This sake is a symbol of patience, tradition, and celebration. Join us in toasting to the beauty of sake and the joy it brings.
