Despite the fire at the former Debenhams building on Princes St, and following being closed for a few nights due to safety concerns on Rose St, we're pleased to say we're open tonight.

While the events from Wednesday night are sad and unfortunate, we look forward to welcoming travellers and locals alike this weekend.

Come join us for some good old fashioned welcoming hospitality, booze forward cocktails, and chilled vibes.

Maybe this is a good time to remind some people that we're actually still open in general. As potentially Scotland's most secretive cocktail bar, we aren't very active or vocal on social media, but we're very much still doing our thing... If the light above the door is on, give us a knock.

Thank you Edinburgh council for creating confusion again with the implementation of a one way system along Rose St.

Access from Castle street is blocked so any guests hoping to come along tonight or tomorrow will have to enter our section of Rose St via Frederick St.

Good vibes, flowing bubbles and smiles lie behind our always closed, but very open doors.

The doors are always locked, so please knock people!!!

Vintage cocktails are officially on the menu at Never Really Here—every day, all year round.

We’re serving up classic drinks made with spirits from the 1950s, 60s, 70s and 80s, alongside their modern counterparts. Think of it as a time machine in a glass, where every sip tells a story.

But if you really want to dive deep into cocktail history, Thursday, April 24th is a date to remember.

In association with Campari we’re showcasing the Vintage Negroni vs the Modern Negroni. We’ll explore the evolution of this iconic drink, from its story filled roots, to today’s absolute staple in any bar worth its salt.

Love it or not, it's a King amongst classics.

£60 per person, including Vintage Negroni, modern version, bar bites and a guided experience.

So, we're hiring... We're looking for a keyholding head bartender or bar manager depending on experience.... We're needing that wonderful human to be customer focused, a believer in hospitality, must have a good cocktail knowledge, with an interest in the classics, and a sprinkling of creative flair to all that they do.

We're not asking for much... Oh and a smile is also an important commodity.

We need someone with experience, that can work independently and be proactive, someone that is reliable and a people person.

We offer a competitive rate of pay, a 4 day working week with 3 days off back to back, and a position that sees you being truly involved and your ideas implemented.

As the darker nights draw in, we're pleased to say our cozy, intimate cocktail lounge is now opening 6 nights a week.

We're now open Wednesday through. Monday, from 5pn, till late.

We'll be serving bespoke booze forward cocktails for those that search us out.

If it's easy it's not worth it, if it's not easy it's worth it...And remember, the doors are always locked, so you'll need to knock.

NOW HIRING...

As autumn brings change, a rare opportunity arises and the potential for fresh challenges.

We're looking to find the perfect people to fill FT positions for bartender/head bartender.

40hrs, 3 days off back to back, salaried at above actual living wage.

As an intimate classic cocktail led drinking den service is key, as well as a good cocktail knowledge... A personable but professional approach to customer service is desired.

Experience is preferred but training is available for your right person.

Define normal? There was talk of things returning to normal not so long ago... Did we ever get back to that elusive normal?

Well I don't think we've ever been normal!

We are pleased to say normal operating hours and service has now resumed though, following a trying 6 weeks without electricity... Open Wednesday - Monday 4pm - 1am.

So pop in and spend some time with this dysfunctional lot, sipping on a boozy beverage.

Oh and we are Jason, Michal and Simon x

We make drinks the old fashioned way(get it), spirit, modifier, bitters, cordials, sugars, etc etc... The way cocktails would have been put together a hundred years ago.

We use modern techniques to impart flavour, mouth feel and smell, while putting as much love as we can fit into each drink for you.

When you add all that together with some good old straight up hospitality... We'd like to think our guests get nothing but a 5 star drinking experience.

So if you like booze forward, flavourful drinks, served with a smile and above average chat, come check us out this weekend.

We're here from 5pm everyday, walk-ins welcome, or you can contact us to guarantee a table. Apologies to those we might not have got back to these past weeks due electrical issues and limited trading hours. We are working on contacting everyone...

Open Friday- Sunday this week, 5pm - 10pm, walk ins only.

We're still running without electricity, so expect a lovely chilled evening by candlelight whilest enjoying some lovingly curated libations with your hosts Simon & Michal.
