This is Fabs.

KOME started as an idea that took its time.

Before that? , & , and years of learning, moving, and figuring things out along the way.

Now? The brain behind the place that brings all of that together.

You’ll still find him everywhere, behind the bar, in the kitchen when Yuki’s off, on the floor when it gets busy, or halfway through the dishes mid-service.

Because this was never just about opening a bar;
It was about building something that felt right, something people could come back to.

Alongside it, the Sake Society, a way to share that passion, and make sake something more people can understand and enjoy.

A long time in the making, still a long way to go.

Made with custom shokupan developed by our friends at exclusively for KOME, because these sandwiches deserved the right bread, and the team there know a thing or two.

Rich, messy, comforting, decadent and dangerously easy to crave.

Still one of our favourite things on the menu.

Our tsukemono plate has been with us since day one, always changing, always a little different.

Right now, it’s carrying something truly special.

Locally foraged Wild Garlic Kimchi, made in-house and fermented over the past weeks.

We had a small batch last year and it didn’t last long.
Back on the plate until it’s gone till next year.

Cherry blossoms in The Meadows, a bottle of sake in hand, not a bad way to spend the day.

We’ve stocked the fridges with bottles ready to go, perfectly chilled for those spontaneous, blossom-filled picnics.

This is Skye.

He’s been by our side for the last 8 years, and part of the bar scene long before KOME.

Before that? Bullard & Worth, Lucky Liquor , and when not on shift, holding court at Athletic Arms for treats and belly rubs.

Now? Resident host.

Known across town, loved by regulars, always in his corner, and never missing a chance to greet (or inspect) every guest walking in.

Loves a party, especially when the wee sombrero makes an appearance.
We call him the host with the most.

He seems to agree.

If you’ve been greeted at the door, chances are, he beat us to it.

This is Yuki.

She joined KOME a month after we opened, quietly took over the kitchen and hasn’t really looked back since.

Before that? Osaka, Tokyo, then moved to Edinburgh bringing her magic to Harajuku, Moss and Nishiki.

Now?
Running our mighty kitchen, with a sharp palate and serious skills.

Camera shy, until you hand her an octopus.

She walked in, looked around and said:
“This is an izakaya.”
We hired her.

We call her the Queen of the Castle.
We’re not arguing with that.

If your food tastes dialled in and everything lands just right, guess what? She’s behind it.
