Prime Sirloin On the Bone
32 Day Aged Wing Tip Sirloin & Roasted Flat Sirloin. Grass reared Beef Shorthorn – Mount Grace Farm, Thirsk - Hot Seared and Hot roasted to internal temp of 52 Degrees – served Medium Rare
Fillet Of Beef
Simply Salt & Pepper Seasoned. Chargrilled & hot oven roasted for 20 minutes - Served rare
Slow Cooked Brisket
Grass Fed Belted Galloway, Summerstone Estate, Lofthouse, Nidderdale. Charles Ashbridge, Taste Tradition. Slow cooked 8 hours in whole 7 kilo piece. Then glazed and finished in hot oven.
Slow Braised Short Rib On the Bone
Riverside Farm, Newby-Wiske, Northallerton, Charles Ashbridge, Taste Tradition
Breed is Luing, Which started out from a cross of Shorthorn & Highland Cattle, Originated from Isle of Luing, Argyle. Slow cooked 8 hours on the Bone. With Aromatic Harissa Spices
