Learning without reflection is a waste. Reflection without learning is dangerous.
Now the dust has settled, we at ‘The Bell’ are taking our time to reflect and see what we learnt from our opening weekend.
Firstly, we learned we need to rest so that we can get this place back up and running properly. So, today we will be closed and then back tomorrow from 3pm (moving forward we’ll always be open on Tuesdays).
We also learnt just how much budvar, strawberry gin and prosecco we’ll need in the future. You guys drank us dry.
We learned that our outside bar needs some serious work so we can offer the same great beverages indoors as we do outdoors to keep the drinks flowing for our lovely guest’s.
We also learnt about the dreaded shirt-off gate. (If you know, you know)
We’ve also learned we may need to buy a few more oysters, get a few more dog bowls and maybe look at our pricing on a few of our offerings.
Next, a very special mention is to learning just how fantastic our team were. We truly landed on our feet when hiring this team. We can honestly say that every single one of them was nothing short of marvellous.
We learned also how special our close friends and family are. We already loved them but now we love them even more. We had our mum collecting glasses with a broken arm, our dad jet washing in the early hours, our sister and her partner pouring pints and drinks without even being asked and our partners Rosie & Chelsea relentlessly working to bring our dream alive. We learnt the extent to how great our friendships are and must thank the boys at for bailing us out the trouble when beers were low and Daz for sorting our cellar when the teething issues were showing.
So much went well this weekend but, when reflecting on everything we did learn the most important lesson.
When you give to Congleton. Congleton gives back.
You came in your masses, you danced, you ate, you played (little one’s in our kids area) you drank and you reminded us why we wanted to build this pub in the town we love.
Thank you Congleton. We’ll see you again soon.
