Great food begins long before it reaches the plate.
For our porchetta, we wanted to start with an ingredient we could truly believe in.

We sourced our pork from Moss Valley Fine Meats — a family farm where Karen & Stephen breed and rear their own pigs in the beautiful Moss Valley, producing their pork, bacon, ham and sausages in their own on-site butchery.

For us, provenance matters.

We care about where our ingredients come from, how they are produced and the people behind them.

Then comes our part — taking that exceptional pork and turning it into something worthy of the table.

Slowly roasted. Beautifully seasoned. Tender, flavourful pork.
Simple ingredients. Exceptional produce.
