Chester Beer Project: "We’re now in the realms of pub perfection and we had a very difficult job separating these last two. I was trying to find a word that best describes the Cellar – and I think the word is modern. This place represents evolution – maybe it’s even the forerunner of the next generation of Chester pubs. Whether or not the craft beer revolution will ever completely eclipse the traditional brewers is open for debate, but the Cellar certainly has more in common with a Brewdog bar for instance than the ‘Olde Dog & Duck’,* for here you will find beer heaven. On one side of the bar, there are three constantly changing cask ales, usually from local micro-brewers, which are always in perfect condition. These are complimented by an array of keg fonts across the rest of the bar carrying a wide range of imported German and Belgian beers, from black lagers and wheat beers to strawberry lambics** and unusual ciders. In addition, the fridges are well stocked with more Belgian beers and some quite frankly ‘wacky’ offerings from the rest of the world and beyond. Add to the equation... late opening at the weekends and what you get is the perfect city centre pub. This is the future. Others will follow their lead". Chester’s best value night out continues! Six quality beers, good laughs and a feast. We go generous on the buffet and the aftermath photo of total decimation says it all; it is tasty, tasty stuff.

Beer #1 Track Brewing Co x Superflux Beer Company - Capacitor
8% DIPA, in cans £15 each (£12 takeout)

Beer #2 FUNKY FLUID - Tricolour (the winner 🏆)
8% Tropical macaron ice cream sour, how good does that sound? On keg £9 a half

Beer #3 Vault City Brewing x 3 Sons Brewing Co. - Triple Stacked Lumberjack Breakfast
11.5% Imperial stout with maple syrup, in cans, £18 a can (£14.40 takeout)

Beer 4 - - Hoptimum
11% TIPA with an ungodly amount of hops, £11 a bottle (£8.80 on takeout) - this is a steal

Beer 5 - Rodenbach - Evolved Caractère
7.2% barrel aged Belgian sour ale with mango and raspberry, in bottles but the last one has been had!

Beer 6 Lervig Rackhouse - Off The Rack American Whiskey 2025
16.4% barrel-aged imperial stout aged in Kentucky whiskey barrels for two years, on keg (£12 a third, or £6 for 100ml)

Balance Brewing & Blending - Birthday Blend 2025 - 5.5%

Five different beers (mainly amber saisons) all blended together by members of the public invited to take part in Balance’s bday celebrations. On keg now.

Tartarus Beers Brouwerij KEES - Lotus Eater - 14.2%

Imperial stout from Tartarus in Leeds, collaborating with Kees from The Netherlands, 45kg of caramelised biscuits added during fermentation. On keg now.
