We're not sure how many of you have detected in recent months or not... but something has been missing..?

A small but very significant part of our character and image has been missing from The Bird in Hand 🕵🏽‍♂️🫆..

Our pub sign is coming back, and we couldn't be more excited!!

We are having our grand unveiling on:

Monday 9th of November at 7pm

Performed by the Lord Mayor of Chester 👨🏽‍⚖️⚖️!

We would absolutely love it for you to come and join us!

It is a drinks only event, with donations welcomed to the Hospice of the Good Shepherd, The Bird in Hand is donating all proceeds of the event to the hospice. As a ginormous thank you to Peter Reid! For his hard work and dedication painting the sign, the charity is of his choosing.

So come down and enjoy every drink! Knowing it's going to a fantastic cause! Enjoy some community spirit 💫 during one of the quietest times of year 👯‍♀️🌌🌧️🍂.

We're very grateful to the Lord Mayor of Chester, Margaret Parker for coming to unveil the new sign!

Plus we must say a massive thanks as always to KDE electrical for their continued help, and for literally putting the spot light on for us! 🔦🌟

Slow Braised Beef Short-Rib

Blimey this one, you'll know about😂. Every bite is well worth it 😍

Delicious Short-rib of Beef from David Joinsons. Alex reckons this is his best ever batch!

Charred and slowly braised overnight, they are so tender it's unbelievable. Lovely fresh Swiss chard, sticky honey glazed carrots, horseradish mashed potato and beef jus.

This level of freshness is sadly just unachievable via the supermarket. The Trout here has reached us directly from the fisherman. No travel to a massive processing plant, no encasement in plastic, no transport hub before reaching a shop and sitting on a shelf. We simply get the beautiful fish, the chefs do their thing 🕺🏽 and it's on your plate. Usually within the same day!!! (For the record our amazing chefs here have done a 24 hour brine/cure with lemons and all kinds of jiggery-pokery 🧙🏽‍♂️🪄 before it reaches the plate 😉)

Fresh Monkfish cooked absolutely beautifully!

Served above a Menai Mussel chowder with homemade fish stock, a smoked Haddock cream, sauce, haricot beans, fresh veggies and fresh herbs. Delicious nutritious and hearty 😋🍋

Not just for the vegans 🌿🍅

We have got a fantastic starter available this week 😍. To be honest we were astonished by the flavours packed into one tomato!!

Plum tomatoes, steamed, peeled, hollowed out. Then finely dicing Heritage tomatoes, lots of olives! Shallots, fresh herbs, and sherry vinegar. Finished with a tomato consomme and chive oil. Fresh and zingy! 👨🏽‍🍳

We have here venison loin. Roasted creating a beautiful flavour, still remaining utterly tender. Beetroot trio. Roasted honey glazed carrots. A jus/reduction made with all of the stock and red w**e, plus a rocket salsa to pack a bitter punch 👊🏽.
On the side we have potato rösti topped with 24 hours slow braised venison. It's top notch!

Venison is back 🏞️🦌🌲. An extremely high quality free range ingredient high in protein/iron and exceptionally lean. Barely any travel involved to reach our plates 🍽️. Not to mention delicious!!!

Available from 5pm Wednesday along with a couple of tantalising special starters we're trailing this week, plus of course a delicious fish special. This week we have charred monkfish 😍. (Photos to come!)

The dish:
Venison rilette, venison slowly simmering for hours upon hours, allowed to cool and mixed with loads of fresh herbs and flavours. Tender and delicious.
A mouthwatering venison and port jus to smother it in. Served with fresh greens and fondant potato.

Partridge and Game Pie 🪶

The Cheshire partridge's this season are unbelievably healthy! In addition we have venison and pheasant incorporated in the pie 🎯🍁

This week from today the delicious pie will be available to all you hungry people 🤤

Wholesome and filling despite being a lean and environmentally friendly choice this season!
Served with a delicious Stornaway black pudding mashed potato! (Thank you Michael Hurst !) Or chips if you prefer 😝

Come and get it before it's gone! We also have two amazing specials on available from today, keep your eyes peeled to see the details!

We're also on the lookout for a local hunter 🏹🕵🏽‍♂️ who can supply us with local deer we can incorporate in our upcoming menu and specials. Please send us a message if you know anyone!
