We’re on the lookout for some friendly faces to join our team.

If you’re passionate about great service and have experience in bartending/hospitality we’d love to hear from you! If you don’t have much on the CV but would love to learn all things cocktails, get in touch too. A good attitude goes a really long way.

We’re after:
• one part time role for around 10-25 hours a week starting immediately
• one full time role starting in October

I think Thursday is one of my favourite nights to go for a sneaky cocktail. That’s why we’ve always tried to make it feel a bit special here...

So each Thursday night from 9, you can catch live piano in the bar.

It’s the perfect soundtrack for sipping on a Black Forest, an Old Fashioned, or that Dirty Martini that you’re craving.

Seriously, can it get any better than a phenomenally tasty delivery from the heroes at Canteen to satisfy the squad?

These guys know their gear and now we’re full and ready for a busy Saturday service.

Yesterday we played host to our dear friends Hamayuu Hamayuu Chester

The brief was to incorporate Kuro Kirishima (黒霧島) Honkaku Imo Shōchū into a cocktail of our design…

The judges crowned our newest employee, Will, with the title of best cocktail: Kuro Kirishima Shōchū, charred grapefruit cordial, assam tea syrup and cardamon bitters - YES PLEASE WILL.

Big shoutout to Yuko, Shiho, Luca, Hugo, Nathan and Matthew for judging and giving up their time to spend the afternoon with us.

We really do have the best neighbours on watergate street!

Taking a moment for our Via Salaria.

Gin, vermouth, blackberry, olives, balsamic.

This cocktail is a nod to the Roman heritage of Chester. We’ve taken the flavours of Rome and distilled them into iced refreshment.

Possibly dirtiest but most flavoursome martini in existence.

Sakura season in Japan may be drawing to a close, but we’re sending it off in style 🌸

The Prohibition team have been going head-to-head in our very own in-house cocktail competition, kindly sponsored by
& , and the results are in

Our top 3 were:
1. Niwa No-Chigiri - Hatozaki blended malt, Akashi-Tai junmai daiginjo genshu, Akashi-Tai ginjo yuzushu, salted rhubarb cordial ~ Connor
2. For Christ Sake - Nikka from the barrel, Akashi-Tai junmai daiginjo genshu, cucumber saccharum, orange bitters ~ Kyle
3. Earth, Wind and Fire - Akashi-Tai shiraume umeshu plum, fino sherry, Laphroaig quarter cask, peach bitters, seaweed rice tea syrup ~ Tom
