✨ Hello, new week! ✨

We honestly can’t thank you all enough for the incredible support over the last few weeks since opening Gibbys. ❤️ Every visit, booking, recommendation and kind word has meant the absolute world to us!

This week we’ve made a few little tweaks and additions to our small plates & picky bits section, giving you even more choice and variation when it comes to building your perfect spread. 🍽️

We’re also adding some new meats to our charcuterie, sourced from the fantastic Eden Valley Smokehouse , as well as introducing a brand-new fish platter! 🐟🧀🥩

There’s plenty more to come, and we’re so excited for you to try everything!

What a weekend! 🥹❤️
We’re still reeling from our FIRST WEEKEND OPEN! 🎉

The team did amazingly well finding their feet — although I think we’ve all realised just how many times you can run up and down those stairs… time after time after time! 😂🏃‍♀️🏃‍♂️

We honestly couldn’t be happier with how the weekend went, and we can’t thank every single one of you enough for coming through our doors, supporting us and making our first weekend so special. ❤️

And for anyone who hasn’t seen our beautiful space yet… here’s a little before & after, modelled by yours truly! 🙈😂

It’s been amazing to see so many of you come through the doors, discover what we’re all about, and hear such incredible feedback about your experiences. ❤️

After 7 long weeks of hard work, it’s safe to say it has all been well worth it — so THANK YOU! 🫶

There are moments when you pour absolutely everything you have into something… and tonight is one of those moments. ❤️
Gibbys is finally here.

Seven long weeks of late nights, ridiculously early mornings, and every last inch of energy have gone into creating something totally different for Carlisle — something built with passion, personality, and, most importantly, all about my dear friend Gibby.

Tonight we welcome the first of two very special preview nights, packed to the brim with invited guests, before we finally throw the doors wide open to everyone on Saturday at 12pm.

Gibby, my dear friend… I wish more than anything that you were here to see this. But I know you’ll be hovering over us tonight, making sure every little thing is just right. 🥃❤️

Your name continues. Your spirit is everywhere. And I’m so incredibly pleased that we found each other.

I miss you always. But tonight, on your Brandy Night, I’ll be raising a brandy to you. Just for you, Gibby.

WOW… WHAT A RESPONSE! 🤯🍻
Table reservations only went live yesterday and it’s already gone absolutely MENTAL! The support you’ve shown Gibbys has blown us away, and we genuinely can’t thank every single one of you enough. ❤️
And now it’s time for our next BIG announcement…

🍺 THE MIGHTY HAWKSTONE IS COMING TO WARWICK ROAD — AND IT’S POURING AT GIBBYS! 🍺

Since I started stocking Hawkstone at The Old Bank, it has absolutely rocketed. So when we started putting the plans together for the bar at Gibbys, there was one name that was right near the top of the list… HAWKSTONE.

For anyone who hasn’t tried it yet, Hawkstone was born in the Cotswolds and was created by Jeremy Clarkson alongside farmers and brewers, using barley grown on his Diddly Squat Farm. It’s built around proper British farming, quality ingredients and taking the time to make seriously good b**r and c***r. 🚜

And now it’s finally making its way to Warwick Road!
On the bar we’ll be pouring:

And the Gibbys fridges will be STACKED HIGH with:

A lot of you will know and remember Yann Besombes at his time at The Halston. He’s been part of the Warwick Road food & drink scene for the last 6–7 years — and now he’s back, taking the reins as the new General Manager of Gibbys! 🙌

We’re absolutely buzzing to have Yann leading the team. He brings with him a wealth of experience, plenty of familiar faces and connections, and a real passion for great food, great drinks and even better hospitality.

Now he’s ready to bring all of that experience into something new and exciting for Carlisle. 👀🔥
