This little Welsh wonder is an artisan Red Leicester laced with chilli and crushed pepper and sealed in red wax. It’s a wonderful mouthful of moist tangy cheesiness with a bite of heat; but the chilli doesn’t overwhelm the cheese or outstay its welcome. So you can happily eat slice after slice as many people do.
